Lentinula edodes — Shiitake — has been cultivated in East Asia for over 2,000 years, making it one of the oldest continuously farmed edible and medicinal mushrooms in human history. In Chinese herbal practice it is known as Xiāng Gū (fragrant mushroom) and has been used as both food and medicine since at least the Song dynasty (960–1279 AD). In Japan it has been cultivated on oak logs for centuries and holds a deeply established place in both cuisine and herbal practice.
